Thoroughbred racehorses, prize winning steers, and lab animals all eat uniform diets. If great variety were important in maintaining the health and wellbeing of those animals, I'm sure their caretakers would've discovered it by now. I don't think our physiology is so different. In my opinion, the important thing is that you get all the essentials (calories, proteins, vitamins, oils, etc.) from the foods you _do_ eat.

For me, the biggest advantage of a uniform diet is that it provides a "bright line" when it comes to eating. I always know whether I'm on the diet or not. If I ate greater variety, I would always have to calculate calories, which requires mental energy I don't think I can sustain over a long period of time.
