Seems like a lot of work for little benefit. While there are certainly flawed methods of pseudo-random number generation, it's not difficult to write a good one.
Unless you're arguing regular dice throwing has bias and is not random (definitely true); but I fail to see how this setup will replicate such bias, as you're not using the same dice every throw, nor non-random throwing methods.
It is still quite cool. My company is looking at creating automated craps tables (similar to the automated roulette machines you see at casinos). Slightly more difficult though as the dice will still be thrown across the table.
